Grilled Cheesy Tomatoes (Easy Peasy)

With tomatoes about to be in abundance and inexpensive, I remember back to my school days in England and this most delicious meal. I have altered it many times over the years and here is my favorite way of enjoying this scrummy food.

Ingredients
6 large tomatoes (or 8 medium), each cut in half
3/4 cup of shredded Cheddar cheese (I prefer sharp for this)
Cooking spray
Optional: Basil, Oregano, Onion Powder, Garlic Powder

Method
Preheat oven/toaster oven to 425.
Spray the cooking container (casserole dish, cookie sheet, whatever) with the cooking spray so nothing sticks. Place cut tomatoes, cut side up into sprayed container. Sprinkle shredded cheese on top of tomatoes. Optional: Sprinkle with herbs/seasoning.
Pop in your oven for 7-12 minutes and cook until cheese is all lovely and melty.

Notes 
In the summer I use a toaster oven to reduce heating my kitchen.
Can be done on an outdoor grill but add cheese after removing from grill.
Makes a fab vegetarian main dish.
Reduce cooking time and increase temperature slightly to melt the cheese but keep the tomatoes as uncooked as possible.
Feeds 3 people as a main course or 6 people as a side dish.
Also very yummy with Mozzarella cheese with a dash of Parmesan cheese.
Does not freeze, but does keep in the 'fridge for 4 days.
