Janna's Taco Inspired Pie
This is my take on what has become a classic Americana recipe. Enjoy!!
Ingredients
1 lb Ground Beef
¼ cup Chopped Onion
8 oz Tomato Sauce
1¼ oz pkg Taco Seasoning Mix
½ tsp Ground Cumin
½ tsp Dried Oregano
2.25 oz can Sliced Black Olives, drained
8 oz can Pre-made Biscuits
2 cups Coarsely Crushed Corn Chips, divided in two
1 cup Sour Cream
4 oz can Chopped Chipolte Chiles
1¼ cups Shredded Cheddar Cheese
1 tsp Cilantro
Method
Heat oven to 375 degrees.
In a large skillet, cook beef and onion over medium heat until meat is browned and onions translucent. Be sure to pour off the extra oil/fat.
Next, stir in tomato sauce, seasoning mix, cumin, oregano, cilantro and olives to the beef and onions.
In a bowl, mix together sour cream and Chipolte chiles.
Now, cover the bottom of ungreased 9-by-13-inch pan, with the pre-made biscuits. Biscuits will touch each other.
Sprinkle 1 cup of the crushed corn chips on top of dough. Spoon on meat mixture. Spread the sour cream and chilie over meat mixture.
Finally, sprinkle the remaining corn chips over sour cream mixture and the top evenly with cheddar cheese.
Bake for 25-30 minutes, or until crust is cooked.
Notes
Freezes well. Make a double batch and freeze for a no-prep dinner.
Guacamole is great to top this with when serving.
Chipolte chilies may be substituted for any chilie you and yours can handle.
Ground beef may be substituted with ground chicken, turkey or pork.
